This is a great way to eat leftovers. This was last week's barbacoa. We added leftover mushroom / pepper / onion medley from the cheese steaks, rice (made with the barbacoa beef broth) and sharp cheddar. The sauce is really important, this is a decent recipe:

I used red fajita seasoning instead of all the spices, a few spoons of sugar, and then a few oz of heavy cream at the end, rather then the vegetable oil. These enchiladas are becoming one of our go to meals.

Philly cheese steak

My version of the Philly cheese steak sandwich. I use Boars Head rare roast beef and cook it up with Texas Pete on a pan. Stir fried mushrooms, onions, and green peppers are required. This particular sandwich has Munster cheese. Lettuce & tomato optional, but I really like them on any good sandwich. Otherwise you end up with a meal without any veggies or color. Finished with a Claussen pickle.
